Wassail
Makes 4 cups, enough for 2 large or 4 small servings

The custom of Wassail or Wassailing comes from England and is named for the Anglo-Saxon toast 'Wes' meaning good, and 'Hael' meaning health. An old Yuletide custom, Wassailing involves going from door to door and receiving a drink of hot-spiced ale or cider in return for a song or a blessing on the house, orchards and/or crops of the owner. Its origins are almost certainly in ancient fertility rites, and it is in turn the origin of the more modern custom of caroling. Many towns and regions of England, Ireland and America have special songs to celebrate this activity.

2 cups apple cider
1 cup pear nectar
2 tablespoons Chef Paul Prudhomme’s Sweetie Magic
2 tablespoons honey
1 tablespoon lime juice
1 tablespoon lime zest
2-4 strawberries (optional)


Combine the cider, pear nectar, Sweetie Magic, honey, lime juice and lime zest in a saucepan over medium heat. Bring to a simmer, stirring frequently. Divide the hot mixture between 2 heated mugs. Add a strawberry to each mug and serve.
